Yay, I made some good food.

Okay, so first of all I've had this tube of polenta* in my fridge for over a year (which Wen Wen may remember seeing in my old fridge in my old apartment). It has a long life, the expiration date was May 2012, but I decided I should finally use it already. So I made this.
First I cut up two scallions and stir fried it in a mix of olive oil and garlic olive oil that I bought by accident and is too garlicky but is good to add flavor.

While that was cooking I cut the tube of polenta into thin slices. These should be pretty thin, I had one slice that was thick and so had kind of a weird texture when cooked.


I added these to my electric skillet where the polenta was cooking and cooked them for a bit and then flipped them over and cooked them on the other side. You can tell when they're cooked.
Then I added a can of black beans and sprinkled some smoked paprika, which really gave it a lot of its flavor.







And then I stirred it and cooked it for a bit more, and then it was done.

It tastes much better than it looks, and I have some leftovers.
Now I have to trek downstairs to wash my dishes and take out my overflowing trash.
